Sevai
Sevai.
The
divine sweetness. Manna from heaven.
Milky
and so delicious. You can go on eating and still not feel sated. There’s
nothing like it.
You
can have it in any which way you like.
Thick,
thin, watery, with lots of dry fruits or without, with silver foil or without,
with plenty of milk or without.
The
taste is extraordinary. It’s the occasion that adds the extra flavour. After 30
days of fasting, sevai is like a prasad, a boon, a gift.
I
remember fondly the Eid celebrations when mom was alive. The sevai she made was
perfect brown – getting the right colour is in itself an achievement. Then the
perfect thickness and the perfect sweetness. In a bowl she would serve the four
of us and then sprinkle a spoonful of milk. Ah! The gooey, slushy flavour. The
taste still lingers in the memory of my mouth.
Now,
wife makes the sevai. A different hand, a different touch, a different tang. Just
had a bowlful and don’t feel like eating anything after that, so that the taste doesn’t
vanish.
Eating
sevai on Eid is like eating modak on Ganesh Chaturthi, fruitcake on Christmas
and ravo on Pateti.
Hail
Sevai, the sweetest of all dishes
That
makes sweeter the Eid wishes
Close
your eyes and just eat and eat
Nothing
is greater than this treat.
